So I got this idea from the Gertrude Hawk store at the local mall. They had three marshmallows on a stick. They were dipped in chocolate and rolled in graham cracker crumbs. They were pretty good and so I decided to try to make them myself. My variation was slight: I went with only one marshmallow per stick and I used toothpicks as the sticks. So here’s how I did it:
I started by getting some goodchocolate and melting it. I like Ghiradelli. They sell milk chocolate chips in 11.5 oz bags at the local Giant. I hear that the best way to melt chocolate is in a double boiler. I thought about going out and buying one, but I cheated instead. A double boiler is simply a bowl over a pot of boiling water. So I took a Corelle serving bowl and put it over a small saucepan with simmering water. Put the chocolate chips in the bowl and they will slowly melt.
Keep stiring the chocolate occasionally as it melts. Once it’s all melted, you can take it off the heat and start dipping. The rest is pretty simple and straightforward. You dip the marshmallow in the chocolate. Then you roll it in the graham cracker crumbs. Finally, place it into a small cupcake cup. These small cupcake cups are just the right size. Put them in the fridge until the chocolate hardens. You can store them in a sealed container at room temp. I don’t know how long the shelf life is on something like this. I always made them the day before they were to be eaten and there has never been any leftovers. They are a big hit at parties.
